I wish I was a great cook. I can follow a recipe, even make some modifications to suit my families likes, but I can't just get in the kitchen and create. That being said I do have some favorites that I think are pretty darn good. Some come from my childhood, some from Kevin's and some I've picked up from here or there.
One of our new favorites from Kevin's childhood is a modified chicken chow mein. You start by boiling a chicken. I boiled mine with some chopped up scallions and salt for about an hour. Then you pull your chicken out, de-bone it and cut into bit size pieces. Back to the pot you boiled your chicken in. You can either strain the broth you now have, if you don't like any chicken pieces being in it but it is not required. Next you take La Choy Chicken Chow Mein cans and use the vegetables (we don't use the top can that has chicken and sauce in it, just the bottom can that has the veggies). Add the can of veggies and your chicken back to your broth. We also add extra celery and water chestnuts, but you can add exta of whatever you like or don't add anything. Bring pot to boil. Serve over La Choy Chow Mein Noodles sprinkling a few on top as well. I like to add pepper to my bowl.
Another one we like a lot is tin foil dinners or hobo dinners. This requires a fire and is usually associated with camping, but at our house we have them just for fun. Note: that you if you don't have a campfire or a place to make a fire you can bake these in the oven! These dinners have endless possibilities. The classic is a hamburger steak, pieces of potatoe, carrots and onions. Place food in tin foil, salt and pepper to your liking, fold up tin foil and put in fire (or oven). Cook until done. You can also do chicken or fish and any combination of veggies. The other day when we made these a put a bunch of asparagus in tin foil with butter and salt, it was delicious.

Pesto Ravioli! I obviously buy the pesto and ravioli already made and add some chicken and viola! I need to know about the "hobo dinners" what degree in the oven? It sounds delicious!
